Buttery Cheese-Topped Broiled Garlic Bread
Makes 20 servings
•2 (1 pound) loaves Italian bread
•10 tablespoons butter, softened
•4 teaspoons extra virgin olive oil
•6 garlic cloves, crushed
•2 teaspoons dried oregano
•salt and pepper to taste
•2 cups mozzarella cheese, shredded
1.Turn on your broiler and leave it to preheat. Lightly grease a baking sheet with either cooking spray or butter.
2.Slice the loaves into 2 inch slices.
3.in a small bowl, add the butter and beat it lightly. Add the extra virgin olive oil, garlic cloves and oregano. Mix well. Taste and season with salt and pepper.
4.Spread the spiced butter mix on the slices.
5.Place the bread slices on the baking sheet and place in the preheated broiler. Broil for about 5 – 7 minutes or until the slices start getting brown around the edges. Keep an eye on the bread and make sure it doesn’t burn.
6.Remove the baking sheet from the oven and sprinkle the cheese over the slices. Return the baking sheet to the broiler and broil for another 3 minutes. It should be broiled just enough for the cheese to melt and turn slightly brown.
